Chef Daryl Butterfield brings a taste of fall with his Apple Glazed Chicken and Rice with Roasted Vegetables

RENO, Nev. (KOLO) – Check out this delicious dish from Daryl Butterfield of Reno Recipes.

Ingredients:

  • Chicken fillet
  • Rice
  • Roasted garlic
  • Broccoli
  • Carrots
  • Baby tomatoes
  • Apple
  • Red onion
  • Apple juice
  • Honey or maple syrup

Directions:

  1. Sear the chicken breasts and then brush them with a reduction made from fresh apple slices, a little apple juice and honey or maple syrup for a touch of sweetness.
  2. Cook the rice and add the roasted garlic.
  3. In a hot pan, roast the broccoli, carrots, baby tomatoes and red onion until caramelized and tender.
  4. Serve the chicken over the garlic rice and serve the roasted vegetables separately.
